Spicy Lentil Soup

This soup is simple to make - and you can alter the amounts and make more if you want to freeze some for later. If you like really spicy foods you can add more spices - some ground coriander seeds, ground cumin seeds, a bit of chilli (chilli has pain relieving benefits) - choose whatever suits your taste.
1 In a pan, cook onion, carrot, and celery with a little oil till soft. Add remaining ingredients, bring to the boil and simmer for 45 minutes, stirring occasionally. If you are adding some ground spices, add them at the begining and lightly fry them off - this will bring out the oils an d increase the flavour.
2 Check seasoning. Serve with a swirl of nut yoghurt or plain yoghurt and chopped coriander (cilantro) leaves
